Our bees forage on a myriad of wildflowers in the Northern Catskills all summer and finish their collection in the fall months with Japanese Knotweed, giving our honey it's unique rusty hue. This year we will offer two variations,
Midsummer | Our midsummer honey includes a beautiful array of summertime blooms such as thyme, hyssop, catnip, lavender, mountain mint, echinacea, borage, thistle, comfrey, milkweed and many others. Lovely in tea, this honey leans on its floral profile for its delicate flavor.
Early Fall | This darker honey is a sweet and complex. Our early fall harvest gets it's rusty hue from the Japanese knotweed in the area in addition to the late forage flowers such as aster, goldenrod, sage, poppy, yarrow and many others. This honey has forward notes of caramel, perfect to drizzle over warm oatmeal and baked goods.
