Our bees forage on a myriad of wildflowers in the Northern Catskills all summer and finish their collection in the fall months with Japanese Knotweed, giving our honey it's unique rusty hue. This year we will offer two variations, the early summer varietal which is lighter with floral notes and the fall harvest which is darker with a rusty hue with notes of caramel.
